Contrary to popular opinion, the fifth of May is NOT Mexican Independence Day (September 16). It's actually the remembrance of the Battle of Puebla on May 5, 1862 when the Mexican army (hugely outnumbered) defeated the French army. But who needs an excuse to get chips and queso? In Texas we have definitely embraced Mexican food, culture and music...and even added a little Texas flare to this occasion. I'm pretty sure that I could eat chips and queso for every meal...every day...unfortunately, my body is NOT ok with that, but Cinco is one of the days where it's ok to cheat on your diet.
